[Cambdoc]

I am writing a word document with citations embedded (Endnote) and suddenly
the endnote field codes and the page number field codes are displayed rather
than the field result. When I change (shift F9) the field code back to a
field result and then save the document, the saved document reverts to
displaying the field code.
Any ideas how to stop this and why it's happened?

Press Alt+F9 to toggle the display of field codes.

Alternatively, use the Options dialog box: to hide
field codes, clear the "Field codes" option on the
View tab of Tools | Options.

Use Alt-F9 instead of Shift-F9.
