Default How do I change my spellcheck from US version to UK version?

My spellcheck always highlights words that differ in US language (like
'flavour' as opposed to 'flavor') and I cant seem to change this. Ive tried
options-spelling-customise dictionary but this doesnt seem to work. Any
advice would be appreciated.

Change the language of your text. Select all. (Ctrl-A)
Tools Language Select Language

Long term, change the language setting for each style in your template,
starting with the normal style.
