I am having difficulty inserting a two page pdf document into a word
document. Have also tried inserting to a new word document as well but I only
get the first page.

Is there something I'm missing to cause only getting just one page.

I think the OP is talking about inserting a PDF as an object in which case
the size of the object is limited to the size of one page in a Word
document. Hence, only one page will be displayed.

Save your PDF as JPG or TIFF, and then insert each Page thus generated in
your Word document one by one.
