How can I turn off the red underlining for misspelled words in Word 2003?

Dave,
Go to Tools - options - spelling tab - remove the check next to the first
item in the section for spelling, spell check as you type I think it must be
called.

And if you want to suppress it for a single document, right-click on the
Spelling & Grammar Status icon on the status bar and click Hide Spelling
Errors (or check the box for "Hide spelling errors in this document" on the
Spelling & Grammar tab of Tools | Options).
