When I print a word document on company letterhead, the letters are in blue.
When I print the same document on copy paper, the letters are in black. The
document was created with black font and shows black letters in preview.
I've had the same issue with envelopes, will only print in red letters on
envelopes..

Some inkjet printers use composite black (made up of the colors in the color
ink cartridge) rather than true black (from the black ink cartridge) to
print "nonstandard" documents (meaning, I suppose, documents printed from
any but the standard tray). This mostly affects documents smaller than
Letter size (such as envelopes), but in your case if you're using a bypass
feed for the letterhead, it might affect that as well. Getting a color other
than black usually means that the color cartridge is low on one or more
inks.
