I want to set up a address, phone #, email, birthday list for my family and
then email the list to them. How do I do this?

Create a table with sufficient columns for the bits of information. They can
then use the table as a data source for mail merge. Or if they have Outlook,
create a contacts list and send them that.

I would create a 5-column table in Word. The first row is Name, Address,
Phone...etc.
The second row is your information, the third row is the next person, and so
on.
You might want to convert to PDF when you're done with something like
