Default insert new text in word without deleting previous text?

While in Word; How do I turn off the auto correct that if I have text
written, I then come back to add more text and as I enter in the additional
text the auto correct deletes the previous text character by character

You probably have Word set to overwrite rather than Insert. Try taping
the Insert key on your keyboard.

Press the INS (Insert) key once or double-click OVR on the status bar.
