I have to have text and page numbers starting with 1 then 2, 3, etc in my
header. I cannot figure out how to do this. If I insert page numbers it
deletes out my text and vice versa. The only way I can seem to achieve both
is for each page to have the same number. If I change one number, they all
change. Any ideas?

Insert your text. Use a { PAGE } field where you want the number.
