Is there a way to simply disable auto correct entirely?

Disable Word Auto Correct
You can't actually switch the feature off, but if you go to Tools

Yes, you can disable AutoCorrect by clearing the check next to
"Replace Text as You Type" in the AutoCorrect dialog box.
