Default Formatting within Form Text Fields

In Word 2003 and prior, it isn't possible to do any Font formatting, such as
"Bold", "Italics" and "Underline," either from the Formatting Toolbar or the
keyboard in text form fields once protected (which I need to do to make the
forms accessible).

Is this still true in Word 2007? I've been slow to upgrade, but if this has
changed, I'll upgrade tomorrow.

If you use the same type of form fields then the form behaves exactly the
same way. Form fields are used for collecting information. If you want to
free-format a document then a form is probably not the best approach.

Actually, in Word 2007, there are even greater formatting restrictions on
protected documents. For example, in unprotected sections, you can only
apply styles that have been defined as Quick Styles.

But, as Graham wrote, if you want to change formatting as you type a
document, you shouldn't make use of a form anyway.
