Can you customise a button using alpha numeric keys?

On 97, you were able to edit the text which appeared on the button - there
doesn't seem to be an option for this on 2007 (it seems to only have picture
keys).

Sorry, no. The only QAT buttons you can customize at all are those for
macros, and the buttons can only be the icons offered in the dialog.
You can change the text in the tooltip that appears when you hover
over the button, but there can't be any text on the button itself.

No text on QAT controls but the range of images is practically
endless. See:
