Default Can I link 2 dates in a document so changing 1 changes the other?

I am trying to link dates from an itinerary in a booklet to the same date as
it appears elsewhere in the document so if I change the itinerary all the
corresponding dates will change.

If the date is not entered with a field code, you could bookmark the
original entry of the date and then insert a reference to that bookmarked
date.

Use Insert - Reference - Cross-Reference -Reference type: Bookmark and
select the appropriate reference.

When you update the original entry, you may need to update the field.
