Can somebody explain what the author of a paper I am editing did with
his in-text references?

They are in the name-date style, such as "(Brown, 1999)", inside his
text. However, some of these references appear in gray boxes on
screen and seem to have some sort of coding embedded in them.

What has he done to his references, and how can I undo it? Thank you.

They are evidently fields, inserted either through Word 2007 or an add-in
such as EndNote. You can see the field syntax by pressing Alt+F9. If you
really want to unlink them, you can use Ctrl+Shift+F9.
