Where can I find a complete list/definitions of the fields and switches for
Word 2007? I was unable to solve the problem of making page numbers in the
TOC roman. The page numbering was "stuck" in arabic mode. Then I tried
changing Arabic to Roman (in the curly braces) and it worked in capital
letters. On a whim, changed to roman and small number letters! Got me
wondering how many other problems or function is available.

You can use Format Page Number in Word 2007 just the same as in any previous
version (Insert | Header & Footer | Page Numbers | Format Page Numbers). You
do not need to apply switches manually (and in fact, this can backfire). But

Unforgivably, Microsoft has included Word 2007 help topics only for fields that
are new or changed since Word 2003, and the online help search seems incapable
of finding the Word 2003 help topics for fields that haven't changed.

Fortunately, those topics are all on the Microsoft site and have been indexed by
Google; you can get the whole list by going to http://www.google.com and
searching for "field codes" plus the name of the field (for example, "table of
contents") and adding the qualifier siteffice.microsoft.com to the end.

In this case, the switch is applicable to any field that displays numbers, so
the topic you want is "Format (\*) field switch",
