Default Word 2007 Styles

I have a document originally created in Word 2000. When it is opened in Word
2007 the style ribbon has NONE of the styles used in the document. I clicked
on the tiny, tiny diagonal arrow at the end of the styles and a box drops
down with a list of styles and none of them are in my document. There is an
"Options" button at the bottom right that when clicked brings up a dialog box
labeled "Style Pane Options".

One of the options there is a "Select styles to show" with selections that
include "In current document" which I select, and pick a sort order of
"Alphabetical" click OK to exit, and this brings me back to the list of
styles that are now in fact the styles in my document! To get out of this box
one must click the"X" at the top right and when that is done, I would expect
to see my styles (just shown) now in the ribbon. The ribbon content is
unchanged.

What did I do wrong?

The option you selected is for the style pane only. The styles shown on the
Ribbon are the Quick Styles. You can promote styles to the Ribbon by
right-clicking on it in the style pane and choosing "Add to Quick Style
Gallery." You can remove fonts from the gallery by choosing "Remove from
Quick Style Gallery." The order in which fonts are shown in the gallery
(which determines which ones will be visible with scrolling) is determined
by the priority you give them; click on the Manage Styles button in the
style pane and select the Recommend tab. This allows you to determine the
priority of any given font relative to others.

You'll see that, by default, Normal is 1 and No Spacing 2. Heading 1, the
third font shown in the gallery, is 10, so if you give any font a number of
3-9, it will be promoted above Heading 1. Actually, all the heading styles
are rated 10, but all but Heading 1 are coded as "Hide Until Used," so you
may not see them in the style pane (although in practice, it appears that
one level below the current one is displayed, which means that Heading 1 and
Heading 2 are shown if you choose "Recommended styles" to be shown. If you
apply Heading 2 to a paragraph, then Heading 3 also appears, and so on).
