Default use the insert key

I use a table in word and I want to insert part of a date over a date using
the insert key. How can I turn on the insert key pad?

Default use the insert key

I'm not aware of any "insert key pad." The Insert key toggles between Insert
and Overtype, and it's not clear which of these you're trying to do.
