Somewhat unsurprisingly, I've been able to waste 2 hours of my life clicking
a load of options on and off and eventually found a way to stop this occuring in Word. For anyone who doesn't think that the answer is to take a big plank and whallop your monitor with it until Word does what you actually want it to do the answer to my issue was to go to Tools/Options/View tab and to uncheck the 'Field Codes' option box.
