custom merge fields

Hello, How do I create custom merge fields? I have a document with custom merge fields (Insert Merge Field) and I want to add a custom merge field. I am new to Microsoft word mail merging. I want to map these custom fields to the data file by using edit recepients. Thanks for your help.
