Default Page setup

In the same word document, how do I set some pages Portrait and others
landscape?

You need to put in Next Page Section Breaks. Using section breaks you can
set Page Setup options per SECTION. All you need to do is go to where you
want the break to occur, Select Insert | Break | Next Page Section Break

Once you have all your section breaks in, then go to each section and go to
File | Page Setup to set your options.
