Default Table gridlines

How do I ensure the table gridlines remain hidden when others open the
document (or form) I've created?

You can't - whether or not table gridlines show is a user setting.

What you can do is make the borders white (or the same colour as the
background). As borders take precedence over gridlines this effectively
hides them.
