Completely shut off? Remove the dictionary files.

Short of that, you can format text in the document to "do not check spelling
and grammar."

"Completely" as in:

1. Completely for a specific document?

2. Completely for all documents?

3. Completely as in "Check spelling/grammar as you type"?

4. Completely as in checking spelling grammar when you press F7?

Here's how to do all of the above:

1. In a specific document:

a. If you want to be able to check spelling manually, but you don't want
spelling or grammar errors marked (but you don't want to turn off the "Check
spelling/grammar as you type" feature in other documents), go to the
Spelling & Grammar tab of Tools | Options and check the boxes for "Hide
spelling/grammar errors in this document." You can also access this setting
by right-clicking on the Spelling & Grammar Status icon on the status bar.

b. If you want to prevent spelling/grammar checking entirely in a
specific document, Ctrl+A to select the entire document, go to Tools |
Language | Set Language, and check the box for "Do not check spelling or
grammar." You can also apply this setting to specific selected text, or you
can create a "no proofing" character style to apply to specific text.

2. For all documents: The same settings described in (a) and (b) above can
be applied to all documents based on a specific template, but you will have
to change the settings in the template itself (Normal.dot for Word's default
documents). The (a) setting is straightforward; the (b) setting will require
modifying the Normal style to include "Do not check spelling or grammar."

Note the distinction between (a) and (b). With (a), the "errors" don't show,
but you still reserve the ability to check spelling/grammar manually. With
(b), if you run the spelling/grammar checker manually, either nothing will
happen or, if specific text is formatted as "no proofing," you'll get some
checking and a message that some text was skipped.

Removing the files would result in Word's throwing an error if you try to
check spelling, which might not be desirable. It would certainly have the
desired effect, however, if that was to prevent users (students, presumably)
from using the feature.
