Default How can I keep table cells from expanding with form fields?

I've inherited a document with a table that contains form fields. Can I
limit the size of a cell so that the form field can expand to fill it, but no
further? (Currently the cells keep expanding, which messes up formatting.)

With the document unprotected, format your table rows for fixed height and
your cells or columns for fixed width. Then reprotect your document. I would
recommend doing this in the template.
