I have tried clearing all auto correct features, yet my documents still apply
auto formatting. Is there a way to disable it?

There are two dialogs that control AutoFormat. One is AutoFormat, the other
is AutoFormat as you type. Both are tabs on the dialog box that pops up
under AutoCorrect Options.

Personally, I keep most of the ones in the "Replace as you type" grouping
checked. They are relatively innocuous and often useful.
