Can I disable the CAPS LOCK key which I forever hit by mistake?

No, but you can have Windows play a sound when it is activated / turned off.
This is not a Word question.

In Word, I believe you can have AutoCorrect turn off Caps lock when it
appears it isn't being used correctly.

I would use the sound feature instead, though.

Default Disabling keys

There is also a setting to make the Shift key turn off Caps Lock just as it
works with Shift Lock on a typewriter.
