Default How do I insert text at the desired font?

To whom it may concern,

Typically when I compose an email I insert (as text) base information from a
file. I prefer the font Book Antique, 12 italic, which is set as my default
text. When the text comes into my email it is always at Courrier New, 10
italic?

Can someone help me?
