I'd like to create a document that displays two long documents side by side,
so that the text runs from page to page, rather than from the left column to
the right column then on to the next page. So document one would occupy the
left column on several consecutive pages, and document two would occupy the
right column on the same consecutive pages. I would be able to edit text in
either column without affecting the other.

Can anyone guide me? Thanks!

The nearest that you could come to this is to insert a two column table in a
document and insert the text of one document in one column and the text of
the other in the other column.

And if you do this, be sure to break the table up as frequently as possible.
For example, start a new row for each new paragraph in the parallel texts,
and split the table when possible for subheads or the like. Word is
uncomfortable with very long tables and will generate many problems
(especially regarding footnotes) with long single-row tables.
