When opening an existing WORD or EXCEL file, it shows columns like I'm in
iTUNES..song, genre, album instead of file, date, size? |

Sounds like you're looking in the "My Music" folder or a folder within it.
Navigate to a standard folder & the captions may update accordingly... and don't save your Word & Excel files in a music folder:-) But it isn't entirely your fault - Windows is a little sluggish in updating the captions when you navigate away from or back to a music folder. Use the Views button in the dialog window to switch to List or Icons, then switch back to Details.
