Default Showing Only New Changes

I have a document that's been heavily edited/changed but I only want to show
new changes moving forward, not all the old changes. How do I do this?

You would have to accept all the existing changes before making new ones.
You will need to do this in a copy of the document if you want to retain a
record of the previous changes.
