Default Font changes: Frutiger to symbols when document is emailed, why?

I type a document in the Frutiger font (which is similar to Arial). Once I
email it and someone opens or saves the document, it is full of symbols and
illegible.

Why? I have never had this issue before.

Chances are the recipient does not have access to this font and the
installation is substituting a symbol font. Use Arial instead.
