Default linking captions

In Word 2000, can you link caption numbers (figure 1, table 2, etc) to the
text in which that figure, graph, table, chart, etc. is called? For instance,
if you say "...see Figure 3" in the body text refering to Figure 3 somewhere
on the page, can you link those two, so if another figure is inserted before
Figure 3 (this means the current Figure 3 would change to Figure 4) the
numbers in the figure caption and in the associated body text automatically
change to Figure 4?

Yes. Use Insert | Cross-reference and select Figure.
